Saturday Savory: Red Flannel Hash

Well, today I have for you a nice, complicated recipe. I know, I usually say the opposite: a nice, simple recipe; but today's recipe is far from simple.

It looks pretty simple, right? For all you southern folks, it might look like a tasty fried potato recipe, with a twist. However, there are many steps in between pulling out the ingredients
and putting them in the skillet. First off, though, here are the ingredients and equipment necessary.
                Ingredients

  • 1 medium beet
  • 4 medium red potatoes
  • 3 tablespoons oil
  • salt
  • pepper
  • 2 tablespoons minced garlic
  • 1 sweet onion
  • 1 tablespoon green onion

                Equipment
  • paring knife (or peeler)
  • 2 separate cold water baths (as in not hot, but don't put ice)
  • baking sheet
  • large pot of boiling water
  • 1 ice water bath
  • cast-iron skillet
  • wooden spoon
Now, this might seem odd for a searing in a cast-iron skillet recipe, but go ahead and pre-heat your oven to 400ºF. Next, do these steps.

Now cook those beets for 8 minutes in your pre-heated oven, or until they are slightly tender. Once they are done, pull them out and just let them sit out of the way until you need them.

When you place the potatoes in the boiling water, it should stop boiling. Let the potatoes cook until the water is boiling again, then drain the potatoes and put them in the ice water bath to stop the cooking.

Now we are finally ready for the cast iron pan. Heat the skillet for 3 minutes over medium-high heat. Then:

Alton warns not to overfill the pan when cooking this recipe, as this will leave the ingredients soft, not crispy.

Voila! The recipe is done. This recipe was pretty good, we thought, but it took a lot of effort for some medium flavors. My mom plans to make some traditional fried potatoes this weekend to show that not all fancy recipes are better.   1. The recipe was good. It's a "distinctive" flavor and oddly enough the beets were the best part of it! But, the flavor wasn't that strong and for all the work it was a little disappointing. Maybe a little more spice somewhere would have taken it up a notch. A good dish, just not quite as savory as it looks. But, they did an excellent job preparing it!
