Saturday Savory: Chicken Salad

With the weekend here, especially a holiday weekend, I thought it would be good to share an easy recipe great for picnics and get-togethers.

This is a very simple recipe open to change depending on preferences. For instance here is
the ingredient list:

  • 1/2 cup mayonnaise (plus more as desired)
  • 1 can (20 ounces) pineapple chunks or tidbits (keep some of the juice)
  • 1 packet (1 ounce) Ranch Dressing Mix
  • 2 cups cooked chicken (shredded or cubed)
These are the ingredients we use commonly in our version of chicken salad. You can also add in celery or grapes for flavor and pecans for crunch. Now, what to do!

And that is it! If you are going to put in grapes, stir them in after you have tossed the dressing with the chicken. If you want to have some celery or pecans, add it in with the pineapple in the first step. Once everything is stirred together, chill it covered in the fridge at least one hour before serving. All done! I hope you try and enjoy this simple recipe. Also, if you have ever had something like this before, feel free to share the experience with me through Facebook or the comment section below.

With Apologies to Robert Frost

I have a class for school called Speech. This is supposed to help me learn how to stand properly while speaking, pronounce words properly, and so on. The most recent section is on how to give meaning and feeling to a  poem when reading one out loud. My teacher, Mrs. Autrey, has been reciting poems to us as examples, and she uses a variety such as happy poems, sad poems, thoughtful and so on. One of them that caught my attention was a funny remake of the famous poem "Stopping by Woods on a Snowy Evening" by Robert Frost.   The original is one of my favorite poems, and I have always loved the other poetic works of Robert Frost. Here is the original poem: Stopping by Woods on a Snowy Evening By Robert Frost   Whose woods these are I think I know.    His house is in the village though;    He will not see me stopping here    To watch his woods fill up with snow.    My little horse must think it queer

Annual Church Picnic 2015

This is just some of the pictures from a church picnic we had on Saturday. Monday Munchies: Peanut Butter Blossoms

Today's recipe has a little more work involved than some of my recipes I've shared, but the result is worth the effort. The ingredients for these cookies are as follows:
